Mango Peri Wings

Mango Piri Chicken Wings
Prep List:
For the Chicken Marinade:
• 2 lbs chicken wings
• 1 cup onion juice
• 3 cloves garlic
• 4 tsps. lemon juice
• 1 table spoon olive oil
• Half a tsp dried oregano
• Salt to taste
For the Mango Piri Sauce:
• 1 cup chopped shallots
• Half a lemon peeled deseeded and chopped
• 1 cup mango pulp
• 1 sweet red pepper deseeded and chopped
• 8 cloves garlic
• Half a cup of white wine vinegar
• 2 tsps. salt
• 2 tsp paprika
• One cup olive oil
Procedure:
Marinate the wings for at least 8 to 24 hours.
Heat oil in a pan and add all the sauce ingredients and sauté on a low medium heat for 10 min. Once it cools down blend everything and you will have the sauce ready for the wings. For best results refrigerate the sauce for about 2 days as the sauce develops more flavor.
Get your grill for medium high heat and place the wings on the grill. As you are grilling the wings, when they are about 80% cooked, baste the wings with the mango piri sauce.
